Yes. Sweet potato nachos. If that sounds crazy to you, you should rephrase that to crazy good! To be honest, this recipe is perfect for when you need to wing it. Surprise guests and need a quick dish? Cook up some sweet potatoes, add whatever you have lying around in your fridge and you’ve got a tasty meal.

Wash and dry sweet potatoes.

Soak to remove excess starch.

Use a Ziploc bag to season.

Bake until tender and crisp.

 

Ingredients

3-4 medium sweet potatoes

2 TBSP olive oil

½ TBSP chili powder (or to taste)

1 TBSP + 2 teaspoons cumin (or to taste)

Salt (to taste)

1 can of black beans

2 tomatoes, diced

1 lb of seasoned pre-cooked meat (ground beef, brisket, chicken etc.)

1 cup cheese, grated

Sour cream

Salsa

Limes for garnish

Directions:

Pre-heat oven to 450 degrees. Wash the potatoes and cut into wedge shapes. let soak in water for about 15 minutes to remove starch, this aids in crispiness. Drain and pat dry. In a large Ziploc bag, add the potatoes, olive oil, chili, cumin, and salt. Seal the Ziploc and shake until the potatoes are well-coated.

Pour the potatoes onto a large baking sheet and bake for about 40 minutes, or until the potatoes are tender and crispy. Be sure to flip the potatoes over about halfway through cooking.

Once the potatoes are done cooking, the fun begins. You can either make a large platter of nachos for your guests, or you can let everyone prepare their own nachos. Really, what you put on top is up to you. I topped my nachos with black beans, left over brisket from a previous meal, cheese, tomato, sour cream, salsa and a squeeze of lime. Go crazy with whatever you have on hand. The sweet potatoes make a perfect base for nachos anyway you like them.
