Chocolate Covered Honeycomb Candy

Instructions
  1. Lay out parchment paper and spray with cooking oil.
  2. In a pan mix sugar and syrup on medium until the sugar begins to melt. Keep stirring until the sugar begins to turn brown, about 4-8 minutes. Be careful to not overcook (in my picture, you can see the color is just slightly on the dark side, go for a golden brown).
  3. Remove from heat and add baking soda immediately, stirring it into the sugar. Pour it quickly onto the parchment paper, it will begin to harden as soon as the baking soda is added.
  4. Let the candy set for about 30 minutes.
  5. While the candy is setting melt the chocolate, either over a double broiler; or in the microwave, by microwaving in 30 seconds increments.
  6. Once the toffee has set, drizzle chocolate on top and put the candy in the fridge to let the chocolate set, should take about an hour or two. Using your hands break the candy into bite size chunks. If gifting put into decorative bags.
